Peanut Butter & Pretzel Truffles
The South Park fans out there will love this one, a recipe for Chocolate Salty Balls that are delicious and gluten-free. Maybe they aren't quite what Chef had in mind, but these decadent little balls are super easy to make and really friggin' good.
I took them to work one day and everyone declared my chocolate balls were the best they've had. You can't beat that folks. *wink, wink*
Chocolate Salty Balls
- 1/2 cup crunchy peanut butter
- 1/4 cup finely chopped gluten-free salted pretzels (I used Glutino Pretzels)
- 1/2 cup dark chocolate chips, melted
Filling:
Combine peanut butter and pretzels in a small bowl. Chill in the freezer until firm, about 15 minutes. Roll the peanut butter mixture into 20 balls (about 1 teaspoon each). Place on a baking sheet lined with parchment or wax paper and freeze until very firm, about 1 hour.
Chocolate:
Melt 1/2 cup of dark chocolate chips in a double boiler, or in a microwave. I like to add a little butter, about a tablespoon to the chocolate so it's super shiny and easy to work with. You can use any kind of chocolate you want, but I like Guittard Dark Chocolate Chips the best.
To Make Balls:
Roll the frozen balls in melted chocolate. Refrigerate until the chocolate is set, about 30 minutes.
