First things first, misterbelly is a chick. Ok, now that’s out of the way, let’s move on!
When my mom was diagnosed with Celiac Disease in 2002, helping her find foods to eat was a challenge, partly because the internet community of gluten-free people was small at the time and partly because the variety of gluten-free foods in the market was very limited. I decided at that point to start misterbelly.com and have loved every minute of it since.
misterbelly is the antithesis of Gluten-Free Girl. I don’t have the time or energy to figure out which obscure flour combinations and what amount of xanthan or guar gum will make the texture of my banana bread just right and frankly I just don’t care. If you’re into that sort of thing great, please send me some of your baked goods and I will gladly eat them and post pictures of myself rolling around with your treats. The extent of my baking is reliant on the pre-made gluten-free flours out there and the occasional box mixes, which to be honest have gotten really good.
Don’t get me wrong, I love to cook and I’ll cook the sh*t out of some pork almost any day of the week, but I’m not going to tirelessly photo document every step like Pioneer Woman nor will I expound upon how whatever dish I ate sent me into some blissful state of ecstasy, ok maybe I’ll do that a little. What I really care about is “Does this taste good? ' and if you care about that too then we’re going to love each other.
What else can I tell you? Well, I've concluded I'm gluten-intolerant (non-Celiac gluten sensitivity) as well as woefully lactose intolerant, have been gluten-free for 8 years, and confirmed that I carry the gene for Celiac Disease through genetic testing, but I don’t want to bore you any longer with details about my life.
